Grass-Finished Beef Order Information
for whole and half beef
We take our cows to Winchester Meat Locker in Winchester, Kansas for butchering so you will pick it up from there when it is cut, wrapped and frozen.
Prices
The butcher fee for a cow is $30.00 for whole and $15.00 for a half. Additionally, there is $.45 cent/lb processing fee for the hanging weight. In case you are not familiar with it, the hanging weight is after the animal is killed, skinned and had its head removed.
Our beef price is $2.92/lb. (for half beef) or $3.25 (for quarter beef) for hanging weight. [You additionally pay the butcher the $.45 cents/lb. processing and their butcher fee of $30.00 (whole) or $15.00 (half).]
Options
One of the advantages of buying by half or whole beef is that you call the butcher and tell them how you want it cut; it is completely your choice. You can have the steaks cut the thickness you desire, order more hamburger instead of some cuts, and custom order. The butcher will tell you what cuts come off a half beef and help you with the decision process.
What You Get From a Beef
An average hanging weight for a cow is between 700 lbs. Here is a sampling of what half a cow will supply. These numbers are approximate:~100 lbs hamburger

~14 roasts
~brisket
~40 steaks
~Soup bones are optional
~The liver, heart, tail, etc, are optional
